I have searched the grocery stores and read so many labels, but I just cannot find a good hamburger bun with suitable ingredients! Well, necessity is the mother of invention, I suppose. I experimented and came up with this super easy, super delicious, very nicely textured 100% whole wheat hamburger bun recipe with no oil, yay!
They were perfect with my
Smoky Chickpea Patties!
Whole Wheat Hamburger Buns with no oil
3 1/2 - 4 cups whole wheat flour
1 Tbs instant yeast
1 1/2 tsp salt
1 1/4 cups warm water
3 Tbs agave nectar or honey
3 Tbs unsweetened applesauce
3 Tbs aquafaba liquid (chickpea cooking liquid)
2 Tbs aquafaba liquid, whipped
1 Tbs sesame seeds
Place all except topping ingredients, starting with 3 1/2 cups of flour, into the bowl of a bread mixer.
Knead on low for 10 minutes, adding additional flour till dough no longer sticks to sides of the bowl while mixing.
Let rest one hour.
Mix dough down.
Let rest another hour.
Mix down again and form into eight equal portions. Roll into balls and place on parchment-lined baking sheet. Smash down firmly with the palm of your hand. Let rise 30 minutes.
Brush with whipped aquafaba and sprinkle with sesame seeds.
Bake at 375 F for 20 minutes.
Cool on wire rack.
