Soups are always my go-to when I need a quick, easy dinner. This recipe was the result of starting out with an old family favorite Chicken Noodle Soup. I tweaked it as I went along and it turned out amazing! I think I just found a new favorite! My grocery store was out of whole carrots, so I bought a bag of shredded carrots instead, and I must admit that I like them a whole lot more shredded versus sliced in this soup, but either way will work just great.
Simple Minestrone Soup

1/4 cups dehydrated onion, or 1 small fresh onion, diced
4 celery ribs, thinly sliced
1/2 bag of shredded carrots, or 2-3 fresh carrots, shredded or thinly sliced
1 cloves minced garlic
1 tsp dried basil
1/2 tsp dried oregano
1/8 tsp pepper
3 cans (14.5 oz each) veggie broth
2 cans water, using a veggie broth can
1 can (8 oz) tomato sauce
6 oz whole grain pasta, any shape
1 can kidney beans, drained and rinsed
Combine all ingredients in a large soup pot. Bring to a boil. Turn heat down to medium-low, cover and simmer 20-30 minutes, or until pasta is desired tenderness. Serve and enjoy!
