Sauteed Cabbage with Bacon

St. Patrick’s Day is just around the corner! It is one of my favorite holidays. My family has a bit of Irish ancestry, which makes the holiday seem a little special to me! We don’t go crazy with the green, but I do like to put a cute wreath on my door, hide chocolate coins for my kids to find, and make a traditional corned beef dinner. And if you’re going to have corned beef, you just HAVE to have some sort of cabbage to go with it, am I right? Well, today I want to share with you my favorite way to eat cabbage: With bacon, of course!

Start by cooking 1/2 a package of bacon, diced, till crisp.

Take the core out of a small head of cabbage and roughly chop it.

Remove the bacon pieces, leaving the drippings in the pan.

Toss the chopped cabbage into the bacon drippings and saute till crisp-tender, about 5 minutes.

Add salt and pepper to taste, transfer to a serving dish, and sprinkle with the crisp bacon pieces.

That’s all there is to it! So fast and easy, you can make it for any meal. I could seriously eat the whole dish myself! I hope you’ll give it a try this St. Patrick’s Day, or any day of the year!
