Delicious Dessert Crepes

We love crepes! We always go for the sweet dessert fillings over savory fillings, and even when we have them for dinner, we fill them with puddings, whip cream, pie fillings, fresh fruit, etc. and drizzle them with chocolate, caramel or strawberry sauce! This is an often-requested meal for birthdays at our house! Crepes are a very simple thing to make, and are a lot of fun to eat!

My daughters learned how to make them a bit differently in their Jr. High class’ cooking unit, but this recipe is my classic go-to. It is always amazing! If you want to make savory-filled crepes, simply leave out the sugar in the batter. 

Start with your dry ingredients: flour, sugar and salt. Whisk them together.

In a separate bowl, whisk together you wet ingredients: eggs and milk. I like to whisk them in a pourable measuring cup. 

Add it to the bowl with the dry ingredients, then pour the batter back into the measuring cup after whisking together for easy pouring into the skillet.

Whisk the batter vigorously. You want it as smooth as possible. Crepes are very thin, and any lumps in the batter will be visible in the cooked crepe. If you have trouble getting the batter smooth, you can pour it into a blender and blend the lumps right out! (Also a great trick for gravy!)

This little skillet is a favorite of mine, but I haven’t been able to ever find another one! You can use any size nonstick skillet. I have even used a well-seasoned cast iron skillet for making crepes!

Heat your skillet of choice over medium heat till hot. Spray the skillet lightly with nonstick cooking spray. Pour about 2 Tablespoons batter into the hot skillet, immediately tilting and swirling the batter in the skillet.

If you want large crepes, use more batter, of course, but just make sure to keep the layer THIN!

Cook over medium to med-low heat till top is almost cooked to the center. A bit of wet in the center of the crepe is fine. Gently slide a thin spatula underneath the crepe and flip it over. Let cook about 15-20 more seconds, then invert the crepe onto a plate. Voila! You are now totally cool in the kitchen!

Look at that beautiful stack of tender crepes! Mmmmmmm! You can put whatever you’d like inside, or simply fold them into quarters and pile your toppings on! Some ideas: fresh fruit, pie filling, pudding, whipped cream, ice cream, ice cream toppings, chopped nuts, etc. Be creative, and have fun!

Ingredients

  • 2 eggs
  • 1 1/2 cups milk
  • 1 cup flour
  • 2 Tablespoons granulated sugar
  • 1/4 teaspoon salt

Instructions

  • Whisk eggs and milk together, then whisk in flour, sugar and salt until smooth. Heat a small nonstick skillet over medium heat. Spray lightly with cooking oil spray, or grease with a bit of cooking oil. Pour about 2 Tablespoons batter into center of pan and immediately swirl pan to coat bottom of pan. Crepe will be very thin! When surface is mostly dry, carefully flip crepe and cook 5-10 more seconds. Invert crepe onto a plate and continue the process till all batter is used up. Serve with fillings and toppings of choice.
