These delicious little cookie bites are so good that you may want to eat them all in one sitting! But don’t do it! Although they are packed full of healthy ingredients, they are high in fat. I like to save them for when my kids are having an especially tempting treat. Then I can pull one out and satisfy my craving for something sweet without any regret. And best of all, they are super fast and easy, and no baking is required!
Cookie Dough Bites
Healthy Snacks, Recipes
1/2 cup almond meal
2/3 cup pecans (or any other nut you prefer)
2/3 cup oats
1/4 tsp cinnamon
1/8 tsp sea salt
1/4 cup agave nectar or honey
2 tsp pure vanilla extract
3 Tbs dark chocolate chips
2 Tbs dried currants, optional
Put almond meal in a medium-size bowl.
In a blender or food processor, add pecans, oats, cinnamon and salt. Grind to a fine meal.
Add to almond meal in bowl and mix together.
Add agave nectar, vanilla, chocolate chips and currants.
Mix well and form into 12 balls. Keep covered in refrigerator.
If you want to freeze them, refrigerate until firm and then put in a plastic freezer zip bag.
