Cashew Cabbage is so delicious! I love cooked cabbage, and this side dish is so simple and amazing. I know the little drizzle of sesame seed oil is non-compliant with a whole foods plant-based lifestyle, so feel free to leave it out. I just really love the extra flavor kick it gives this dish, and since I only make it occasionally, I am okay with that.
Saute half a head of sliced cabbage with 1/4 cup of water, a drizzle of sesame seed oil, and 1/2 teaspoon of poppy seeds till crisp-tender. Add 1/4 cup salted cashews, stir, and serve with a sprinkle of soy sauce.
