Who doesn’t love a hearty soup? Well, my daughter, for one, haha! She won’t touch any soup with a ten-foot pole! I love soups for a couple of reasons: They are versatile, inexpensive, quick to throw together, and they are so comforting and filling. This soup is especially filling with the barley added in. I like to serve it with hearty, whole-grain bread for dipping. You can also change out the vegetables for any you like with great results! Notice the corn in the soup picture? Well, that wasn’t my favorite, so I left it out of the recipe. Feel free to add it back in if you’d like.
